Why couldn't he have used the API key to JSID or fuck up the website harder like deleting the database or someburger? It seems weird for xer to just DDOS it

You can't access the server with a Cloudflare API key. He could've fucked with the records but that would've been logged and I would see it. Reading with an API token doesn't log anything in Cloudflare's audit logs. You could keep seeing the origin ip perpetually if someone never notices the API key was the problem
