is it just me or are most people focusing only on input (prompts) and output (application, models, agents) of AI while treating gritty parts (linear algebra, matrices, neural networks beyond abstract vocab terms) as a black box or some form of oracle?

That's how it usually is, the end user is meant to abstract from most of the inner workings of a software product. That's the part that engineers like me get paid to do. Otherwise it would be like if i went to a burger place and they sold me the ingredients and told me to get fucked and figure it out.

What pisses me off is that because of this dummys cannot comprehend that we literally invented computers and machines after ourselves and our own actions and that AI works on exactly the same principal as our brain but just in a specialized way
